Ingredients:
1 1/2 cups whole wheat flour
1/2 cup rolled oats
1/2 cup honey or maple syrup (for natural sweetness)
1/2 cup unsweetened applesauce
1/4 cup plain Greek yogurt
1/4 cup unsweetened almond milk (or any milk of your choice)
2 eggs
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract
1/2 cup fresh or frozen berries (blueberries, raspberries, or strawberries work well)
Optional: 1/4 cup chopped nuts (such as walnuts or almonds) for added crunch and nutrition
Instructions:
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
In a large mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Stir them together until well combined.
In another bowl, whisk together the eggs, honey or maple syrup, unsweetened applesauce, Greek yogurt, almond milk, and vanilla extract. Mix until the wet ingredients are thoroughly combined.
Pour the wet mixture into the dry mixture and gently stir until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the berries and chopped nuts (if using) into the muffin batter.
Using a spoon or an ice cream scoop, distribute the batter evenly into the muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
Once cooled, store the muffins in an airtight container for up to 3-4 days. You can also freeze them for longer storage.
Enjoy these whole wheat muffins as a nourishing and satisfying treat for breakfast or as a snack. They are a delightful way to incorporate wellness into your daily routine, one delicious bite at a time.
