Ingredients:

  • 80g wholemeal flour
  • 80g plain flour
  • 100g cold butter, chopped
  • 100g cheddar cheese, finely grated
  • 1 small rosemary sprig, finely chopped
  • 1 large egg yolk

Method:


Mix the Flours and Butter: Combine the wholemeal flour and plain flour in a bowl. Add the cold, chopped butter and rub it into the flour mixture until it resembles breadcrumbs.

Add Cheese and Rosemary: Stir in the grated cheddar cheese and finely chopped rosemary for a burst of flavor.


Form the Dough: Incorporate the egg yolk and mix gently with a fork until the mixture starts to clump together. Knead the dough lightly until it becomes smooth.
