Ingredients:
1 cup besan (gram flour)
2 tbsp rice flour
1/2 cup curd
1/2 tsp baking soda
1/2 tsp turmeric powder
1/2 cup water (adjust as needed)
1/2 tsp cardamom powder
1 tbsp ghee (for better texture)
Ghee or oil (for frying)
For Sugar Syrup:
1 cup jaggery or sugar
1/2 cup water
1/2 tsp lemon juice
1/2 tsp cardamom powder
Few saffron strands (optional)
Method:
Prepare the batter: Mix besan, rice flour, curd, turmeric, baking soda, and water to form a smooth, flowing batter. Let it rest for 15 minutes.
Make the sugar syrup: Heat jaggery or sugar with water until it reaches one-string consistency. Add lemon juice, cardamom, and saffron strands. Keep warm.
Fry the jalebis: Pour batter into a piping bag or squeeze bottle. Heat ghee in a pan and pipe spirals into hot ghee. Fry until golden and crisp.
Soak & Serve: Dip fried jalebis in warm syrup for a few seconds. Remove and serve hot!
