Ingredients:

1 cup semolina (sooji)
½ cup yogurt (curd)
½ cup water (adjust as needed)
1 tsp ginger-green chili paste
1 tsp lemon juice
½ tsp turmeric powder
1 tsp fruit salt (eno) or baking soda
½ tsp salt (as per taste)
1 tbsp oil (for greasing and tempering)


For tempering:

1 tbsp oil
½ tsp mustard seeds
8-10 curry leaves
2 green chilies (slit)
½ tsp sesame seeds
½ cup water
1 tsp sugar
1 tbsp chopped coriander (for garnish)


Instructions:

1. Prepare the Batter: In a mixing bowl, combine semolina, yogurt, water, ginger-green chili paste, lemon juice, turmeric, and salt. Mix well to form a smooth batter. Let it rest for 10-15 minutes to allow the semolina to absorb moisture.

2. Add the Leavening Agent: Just before steaming, add fruit salt (Eno) or baking soda to the batter. Mix gently in one direction; you will notice it turning light and frothy.

3. Steam the Dhokla: Grease a steaming plate or cake tin with oil. Pour the batter into the greased plate and spread evenly. Steam in a preheated steamer or pressure cooker (without the whistle) for 15-20 minutes on medium flame. To check doneness, insert a toothpick – if it comes out clean, your dhokla is ready!


4. Prepare the Tempering: Heat oil in a pan, add mustard seeds, curry leaves, green chilies, and sesame seeds. Once they splutter, add water and sugar, and let it simmer for a minute.
