Ingredients:

2 cups spinach (blanched and chopped)
1 cup boiled potatoes (mashed)
1/2 cup green peas (boiled and mashed)
2 tablespoons gram flour (besan)
1 green chili (finely chopped)
1 teaspoon ginger-garlic paste
1/2 teaspoon garam masala
1/2 teaspoon chaat masala
1/2 teaspoon cumin powder
Salt to taste
2 tablespoons coriander leaves (chopped)
2 tablespoons cornflour (for binding)
2 tablespoons oil (for shallow frying)


Instructions:

Blanch the Spinach: Boil water in a pan, add spinach, and blanch for a minute. Drain and immediately transfer it to ice-cold water. Squeeze out excess water and finely chop.


Mash the Vegetables: In a mixing bowl, combine boiled potatoes, mashed peas, and blanched spinach.

Mix the Spices: Add ginger-garlic paste, green chili, gram flour, cumin powder, garam masala, chaat masala, and salt. Mix well.

Form the Dough: Add cornflour and chopped coriander leaves. Knead into a smooth dough.

Shape the Kababs: Take a small portion of the mixture and shape it into round patties.


Shallow Fry: Heat oil in a pan and shallow fry the kababs on medium heat until golden brown on both sides.

Serve Hot: Drain excess oil on a kitchen towel and serve hot with mint chutney and lemon wedges.
